Canaves Epitome

Most every high-end hotel in Oia — maybe in all of Santorini — faces toward the volcanic caldera at the center of the island’s crescent arc. But Canaves Epitome means to set itself apart from the crowd, and it does so both literally and figuratively. Literally, with a position about a mile from the center of town, on the western extremity of the island’s north arm; this naturally leads to what sets it figuratively apart, which is its westward view of the island of Thirasia and the open sea beyond.

To put it simply: it works. Once you’re within the hotel’s walls, you’ll feel like you’ve left Santorini for your own private island. The color palette differs from the usual white, adding depth with gray, black, and rough stone exterior walls. And the villas and suites are all remarkably luxurious, starting out at 45 square meters and only growing from there — and including, at the very least, a plunge pool on the terrace.

There’s a pint-sized spa, as well as the option of en-suite treatments, and the main pool, an infinity-edged stunner with a view straight out to sea, is accompanied by the Elements Restaurant, serving a range of sophisticated European fare with an emphasis on the finest Greek produce and ingredients.
