Right on George Street in Edinburgh’s New Town is an apartment-style hotel that’s perfectly confident in its stylishness — not only is there not a square inch of tartan to be found, but its muted pastels and modernist simplicity fly in the face of expectation. Designed by the New York–based Grzywinski+Pons, it’s won plaudits for its aesthetics, but includes substantial comforts as well, including full kitchens in all of its studio apartments, as well as Mayvn, one of the capital’s hippest cafés.
