He works with a tight network of local producers, who bear witness to his commitment and loyalty. The several-course surprise menu showcases ingredients from sustainable farms and independent fishermen. Legible flavours whose simplicity and elegance set the scene for a slap-up meal. The produce we work with is sourced from local and responsible artisans and producers who respectfully pay tribute to our land. In addition to these ingredients, which dictate our menu on a daily basis, we make our own bread and butter and have made the decision to offer micro-filtered rather than bottled water."
