The crêpe-like dosa, made from a fermented batter of black gram beans and rice, is soul food. Uttapam, a kind of Indian-style okonomiyaki, is popular. The Shrimp Curry steamed in banana leaves bursts with the unmistakably tropical fragrance of spices and coconuts.
