MICHELIN Guide’s Point Of View

It was training at a ryotei in Shiga where the owner-chef came to really appreciate the spirit of Zen and the tea ceremony. He puts much effort into the soup and sashimi, which are the essence of the menu. The dashi for the nimono soup is prepared the day before in order to bring out the taste of the kombu. Tuna is the standard item in the mukozuke – he adds an extra touch, like searing or wrapping it in nori. At the end he serves homemade-style sweets and usucha.
