The owner-chef was given permission by his mentor where he trained to open this, the only sanctioned branch restaurant. Following those teachings, he uses Okukuji Shamo chicken – the meat is flavoursome and has a pleasant texture. He buys the whole chicken and prepares it the same day, cooking it over kishu-binchotan. First-timers should order the set menu, which includes an appetiser, yakitori, grilled vegetable skewers and rice with chicken and eggs.
