A 12th-century château with a view of the Millau Viaduct from its lovely little rooftop pool, the Château de Creissels is notable not just for its history but for its updated contemporary style as well; the rooms, though furnished with carefully chosen antiques, are more akin to modern boutique hotel rooms than to castle bedchambers. Some have private balconies or terraces, and the views from the restaurant terrace are no less impressive — from here, or in the guard room, or under the 12th-century stones of the castle’s old vault, you’ll dine on meticulously sourced local and seasonal French fare.
