MICHELIN Guide’s Point Of View

Satoru Asahina focuses on creating light dishes, prizing the classic approach. He puts a modern touch on the chaudfroid, featuring grilled seafood and meat, served cold. He serves consommé with the main dish based on the Japanese sensibility of serving a hot soup at the end. The dishes are both creative and visually pleasing, with a logical combination of main ingredients, sauce and garnishes.

We procure vegetables from the outskirts of Tokyo out of consideration for food mileage. These crops are cultivated using natural farming and are representative of our efforts to reduce environmental impact.
