MICHELIN Guide’s Point Of View
The owner-chef gets pork from Shizuoka where the head restaurant is, maintaining a relationship of trust built over many years. He lightly fries firm red meat in a blend of corn and sesame oil. He shows ingenuity by using different frying pans for high temperature and low temperature cooking depending on the number of grams. The interior features reused wood from sake barrels, creating a comfortable bar-like atmosphere.
