Sitting by the banks of the Loire in the historic city of Blois, Fleur de Loire is a grandiose 17th century former hospice transformed into a boutique hotel by Chef-owner Christophe Hay. Along with a Sisley spa the Fleur contains 33 rooms and 11 suites in a stunning modern-classic style, featuring state-of-the-art comforts and obsessive attention to detail. Top billing, however, goes to Chef Hay’s eponymous restaurant, which has earned a pair of MICHELIN Stars. The bar is a great way to kick off the evening, with a menu inspired by the chef’s own vegetable garden, and there’s also a second restaurant, Amour Blanc, for more relaxed dining.
