The owner-chef is careful not to fuss with his recipes too much and wants customers to taste the dishes as soon as they’re ready, so preparation is kept to a minimum. For example, the nimono soup is made with katsuo-bushi shaved just before cooking, enhanced with the aroma of dashi. He also makes every effort to ensure that everything is just right; for example, the mukozuke is separated into two dishes, each prepared a different way.
