Saving room for dessert isn't necessary at Nicōsi, as the final course is celebrated exclusively on this tasting menu. There is a strict no-photo policy for all guests who are seated together at the L-shaped counter that is nestled inside a dark, moody space hung with velvet curtains off Pullman Market.  
It's a theatrical experience, with the multicourse meal split into four themes—acidic, umami, bitter, and sweet. It's all surprising, as in an umami course that resembles mille-feuille but is in fact Fat Tailed Tomme cheese crackers with spring onion mousse, powdered sugar and caviar with gold leaf. The sweet course plates wheatberry ice cream over puffed Carolina Gold rice and sprouted buckwheat with a drizzle of praline sauce for another showstopper.
