Perched in a hotel high above St Ouen’s Bay is this smart, understated restaurant where the bright white colour scheme, crisply laid tables and shuttered windows lend an almost nautical feel. The complex cooking takes you on a journey across the globe, guided by Chef Hans Neuner as he crafts dishes inspired by his travels. For one dish, you could be in Hawaii for 'Huli-Huli Chicken', before being swiftly transported to Portugal for 'Treasures of the Algarve', then later on spending 'One Night in Bangkok'.
