MICHELIN Guide’s Point Of View

Yannick Alléno (appointed by Gérard Perse, emblematic owner of Château Pavie), now supervises this local institution that used to be a convent, whose nuns offered protection to pilgrims and travellers. The owners may have changed the name of the establishment (now Hôtel et Table de Pavie), but high standards and authenticity remain the order of the day. The chef from the Île-de-France region has installed a team of trusted cooks and is gradually reorienting the menu towards the South-West, albeit still with the sauces and reductions that are his trademark and his signature. Don't miss the iconic roast pigeon dish ("pigeon soufflé et rôti au feu de l'enfer"). Needless to say, the dishes are accompanied by the superb wines of St Émilion – a memorable experience.
