This 19C house located in a small town on the outskirts of Pau is the haunt of a pair of chefs who learnt the ropes in star establishments: chef Olivier Nicolau, from Lescar, and his partner Karine, in charge of the service. Their subtle, well-crafted repertory showcases regional produce: Projan squab, Lucq-de-Béarn mushrooms, Bahus-Soubiran lemon… Intelligent surf and turf combinations and generous helpings, illustrated by beef tartar with smoked samphire and white asparagus; grilled loin of red tuna and a crispy slice of boar’s head. We recommend the fresh tang of confit of strawberries, prepared like an “arrasimat” (stewed or macerated in its juices) for a delicious conclusion to your meal.
