The chef prepares fresh, spontaneous, multi-dimensional dishes with finesse and originality, eg crabmeat, asparagus ice-cream and grapefruit tempura; red tuna, creamy polenta, smoked aubergine caviar, crisp red cabbage salad; white chocolate cream, gariguette strawberry and sorbet.
