MICHELIN Guide’s Point Of View

Vilhjalmur Sigurdarson’s relationship with nature is highly personal and his cooking is inspired by the seasons. Sustainable vegetables are the backbone here, with the occasional fish or meat dish (mainly on the à la carte menu). His creativity seems to know no bounds and his sauces are exquisite. The chef's commitment
We are distinctly pro-vegetables because we believe they are the future. We are firmly entrenched in our region. I use the Root to Leaf principle and am striving towards zero waste cooking. What we are trying to do is to create a change of mentality that we hope will rub off on more and more people.
