MICHELIN Guide’s Point Of View

A former working-class eatery is now the smart gourmet lair of chef Fabien Fage, who enjoys enhancing the delicate flavour of Mediterranean fish. His signature dish says it all: slow-baked red mullet, a mousseline sauce with a reduction of red mullet and wafer-thin slivers of marinated seaweed. Flawlessly crafted and delicious: what more could we ask?
