Gallic cuisine does not appeal only to Japanese chefs: youthful Korean chef, Younghoon Lee, fell in love with the food of Molière in a French restaurant of Seoul. After honing his skills in the Paul Bocuse Institute and at Lasserre, he and his wife have opened their own establishment in the Brotteaux district of Lyon. Decorated in a minimalist vein, the dining area is boldly modern with a light wooden floor and a theatrically glazed wine cellar. Endowed with an acute sense of presentation and taste, he adds a new spin to French tradition, tossing in a few subtle Korean touches: tartare of melt-in-the-mouth red tuna with beetroot and fresh cream; slow-baked medallion of monkfish with white kimchi sauce. Lee’s vision of cooking is enthusiastic and wholehearted.
