MICHELIN Guide’s Point Of View

The emphasis here is on the combination of kaiseki cuisine with sake. The head chef works with seasonal ingredients and the techniques he learned in Kyoto form the base for his own ingenuity. Everything is seasoned only lightly so that it goes well with the sake. The hassun features a variety of elaborate delicacies and is suited to being enjoyed slowly with sake. Light dishes such as bozushi and nyumen finish the meal.
