MICHELIN Guide’s Point Of View

Aspiring to be a chef, the owner-chef went to work at an Edomae sushi restaurant to learn how to prepare fish. Up until that point, he had thought of nigiri as simply sashimi put on vinegared rice, but by studying the Edomae style, he learned the depth of the art, and the various flavours it creates. After carefully scrutinizing the fish, he pickles it, matures it or boils it. His artisan spirit can be seen in the sushi’s exquisite appearance.
