MICHELIN Guide’s Point Of View

The owner-chef wants diners to get a feel of the season from his cooking, so appetisers come with decorations bearing the ancient Japanese name of the month and the solar term. Around the summer solstice, he hangs cogon grass wreaths as a prayer for safety and health. With the approach of the winter solstice, he expresses the season by serving guests with such treats as a hollowed-out yuzu containing goma-dofu topped with thick starchy mizore sauce.
