Part and parcel of its flagship, Michel Trama’s iconic gourmet restaurant, this Golden Hen (Poule d’Or) is a smart inn sporting old stone walls, a long central wooden table, the legs of which are adorned with lion’s heads, chandeliers and still-lifes... Michel’s son is in charge of the impeccable service. The menu reads like a culinary textbook of bistro classics: ox tail pie, calf’s head in poulette sauce, giant cream puffs with a dribble of caramel.
