If the idea of sampling the cooking of award-winning chef Martín Berasategui 20m underground sounds appealing, then El Hilo de Ariadna, an incredible 15C maze-like bodega of Mudejar origin hidden away in the town of Rueda in Valladolid province, is definitely the place for you, with the added modern bonus of lift access as well as stairs. Here, the delicate, contemporary and ever-consistent à la carte (impressively complemented by a tasting menu) is always centred on the best possible ingredients and has close ties with the restaurant’s surroundings (we especially enjoyed the trilogy of Castilian trout, and the peas from Laguna de Duero with carbonara and Iberian ham). The cuisine here is perfectly complemented by wines produced by the Yllera family (the owners of the cellar), alongside different top-notch labels. A range of other interesting experiences and tours combining food, wine and tourism are also available.
