Converso is located within the walls of the luxurious Castilla Termal Monasterio de Valbuena hotel, a beautiful 12C Cistercian complex that has been converted into an oasis of tranquillity. It is accessed via the hotel's own restaurant, as this gourmet dining space occupies a charming dining room with an open-view kitchen and no little charm. The cuisine here, overseen by award-winning chef Miguel Ángel de la Cruz and available on two tasting menus (Essentia and Centum), showcases traditional Castilian recipes and flavours but with a focus on modern technique and creativity, plus a firm focus on locally sourced ingredients (vegetables from his garden, black truffles from Canalejas de Peñafiel, honey from Olmedo, the superb, sustainably produced prawns from the fish farm in Medina del Campo, artisanal bread from Quintanilla de Onésimo etc). One dish that stands out for its elegance, simplicity and flavour is the truffled yolk from eggs from the property with crispy pork.
