‘Japanese ramen’ was added to the name from a desire to spread Japan’s culinary culture to the world. As befits the name, the shop specialises in domestic ingredients. It serves two flavours of ramen: soy sauce and salt. The soup layers multiple sources of flavour on top of each other: free-range chicken, Berkshire pork, clams and mussels.
