Zino Jacobs whole-heartedly translates his culinary vision into unusual dishes in a set menu. His food is locally sourced, carefully crafted and steeped in fresh, acidic notes. Examples include cuttlefish, gnocchi of roast leeks and a jus based on codium (a type of seaweed) and shellfish. Fascinating!
