The hotel operates on strict sustainability principles, from sourcing food within 150 kilometers to eliminating plastics and using Alpine water in place of bottles. The restaurant follows the seasons with produce from nearby farms and high pastures: a tasting menu that mirrors the landscape just beyond the windows.
