In the Var, a few miles inland from Saint-Tropez, the rose-colored gorges themselves are a remarkable natural attraction. No less compelling, though in a different way, is the Hostellerie Les Gorges de Pennafort, a luxury boutique hotel with a tranquil atmosphere and 13 unusually elegant and urbane rooms and suites. Many of them feature balconies or terraces with views of the famous scenery. In the farmhouse you’ll find the Gorges de Pennafort’s Michelin-starred restaurant, where chef Anthony Salliège serves his gastronomic menu on a terrace whose climate is kept under control by an inventive “bioclimatic” pergola.
