The grand old Fairmont Palliser recently celebrated its hundredth birthday, which means it’s got a century of experience as the grandest, most lavish hotel in Calgary. With a century’s distance, the old parts of the hotel are now positively historic, while the rooms and suites, having been continuously renovated, are a tasteful blend of contemporary and classic. The Hawthorn Dining Room & Bar is a throwback in the sense that it’s an all-day, versatile dining venue — though the cuisine is as contemporary as it gets, focusing on the abundant ingredients grown and raised by Alberta’s farmers and ranchers.
