Is Adrien Descouls's inspiration for his exceptionally fresh cuisine his native Auvergne? Close to Issoire, in a modern building perched right next to the 14C castle, he demonstrates his talent without overplaying his hand: well-selected ingredients, showcasing of the local terroir, and all the ambition that comes with being a young chef. Lovely, comfortable guestrooms with pretty views of the surroundings.
