True to its name, a portmanteau of "Italy", "Nippon" and "Taiwan", INITA delivers dishes that are underscored by Italian technique, jazzed up with Japanese twists and crafted with Taiwanese ingredients. Across a season-driven tasting menu of 10+ courses, the Japanese chef-owner presents simple, modern creations shaped by his culinary influences and personal flair. For the handmade pasta course that concludes the savoury part, the chef rolls the dough fresh before diners. The modest-looking pasta is pleasingly al dente and flavourful.
