On the south side of the Breton peninsula, barely a mile up the Odet river, is the port of Sainte-Marie, on whose waterfront sits the Hôtel du Bac. From the outside it’s a perfectly classic small maritime hotel, and its interiors adhere even more closely to the aqua-and-white color scheme, though they’ve been updated by the attentions of a contemporary designer. It’s perfectly lovely as it is, but what elevates it to a must-visit is the presence of Le Bistrot du Bac, where chef Thibault Rosset deals in dishes that focus on fresh local seafood.
