Bib Gourmand: good quality, good value cooking
Small Shop
‘Break Beats’ is a musical genre and a reference to the chef, who was a DJ in a former life. The clear base soup uses Amakusa Daio chicken, while a medley of mushrooms adds umami for the soy sauce-flavoured ramen, and freshwater mussels do the same for salt-flavoured ramen. Ingredients such as smoked pork fillet and fried enoki mushrooms switch up the flavours. A catchy remix of old ramen favourites.
