Chef Ah-kin hails from Hong Kong and Akin is a love letter to his homeland. The single tasting menu changes with the seasons, but the distinctive Hong Kong influence remains. His deep-fried sea urchin and purple shiso puff pastry is a nod to Hong Kong’s dim sum radish puff.
