Inspired by her grandmother’s miso soup and the sight of her making fresh bonito shavings, Mai Nagamatsu is telling the world about the wonders of katsuo-bushi. She thanks each departing customer with her trademark farewell, Arigatsuo! – expressing gratitude that springs from her grandmother’s love.
