Naturally, braised pork rice is the must-try speciality – slow-cooked pork belly in an amber sauce is melty, but also bouncy; top it with pickles or dried radish with chilli to cut through the richness. Other Taiwanese dishes, such as braised napa cabbage and fried tofu, are also worth a try.
