The menu displays a fusion of local produce (foie gras, mallard) with influences from afar – and that goes for the desserts, too, which are as creative as you would expect from this establishment: apple pastilla with ginger vinegar, green shiso cream, black sesame vinaigrette and apple compote sorbet.
