An uncharacteristically colorful 18th-century palazzo amid the weathered white stone of Ostuni, Paragon 700 Boutique Hotel is nothing if not unique. Its eleven rooms and suites are all different, each one an eclectic mix not only of the delicate and the rough-hewn but also of furnishings and objects from all around the world. The house’s old cistern is now a small and striking subterranean spa, while the building’s interior courtyard is an unexpected oasis, featuring Ostuni’s only hotel pool. Meanwhile Restaurant 700 is a fixture on the local nightlife scene, as is its counterpart, Lounge Bar 700.
