The village of Aubrac has been something of a stopoff for travelers for at least 900 years, being a site of pilgrimage along a well-established Roman road. Standing near the entrance to the village is the stately La Colonie, an update of the 1900s Hôtel Parisien. The Colonie’s rooms come from a French countryside tradition, rustic yet chic and warm. Two loft apartments occupy the top floor, with an arching ceiling granting the luxury of space. La Colonie maintains relationships with offsite Thai massage specialists as well as a thermal spa, and the concierge can point travelers in the direction of museums, restaurants and opportunities to sample local wines.
