By the unwritten rules of French hospitality, a name as understated as Hôtel du Château & Spa is guaranteed to signify something prestigious indeed: in this case, a small and beautifully atmospheric luxury hotel, set literally in the shadow of the walled medieval city of Carcassonne. It’s a family-run operation, a mere 17 rooms, but there’s nothing amateurish about it — the rooms are as dramatic as they are luxe, and the spa is a thoroughly transformative space. It goes without a proper restaurant, though the bar offers light bites in addition to drinks on the utterly unique castle-facing terrace.
