The Eye Hotel’s name is rather literal; it occupies a gorgeous 17th-century building that was once an ophthalmology hospital in the heart of Utrecht. In its new guise as a boutique hotel, it’s got 36 rooms in five different styles — all of them with the basics, like free wi-fi and flat-screen TVs, while the suites offer high ceilings, additional beds upon request, and expansive views of the city. Sophisticated minimalist décor and a cool, muted color palette highlight the structure’s original exposed ceiling beams, which are beautiful design elements in their own right.
