Spain’s Paradores are a network of historic palaces, castles, and other monuments whose preservation and restoration are funded via income from hospitality — which is how, at the Parador de Carmona, half an hour from Sevilla, you end up sleeping in a 14th-century Arab fortress with a commanding, elevated view of the town of Carmona itself. The rooms are historically inspired, naturally, but contemporary in their facilities, and a particular highlight of the experience is the the hotel’s restaurant, serving a classic Andalusian menu in the fortress’s old refectory or al fresco on the terrace overlooking the countryside.
