Here, the Hiramatsu Hotels & Resorts Sengokuhara departs from local tradition and instead follows the model of a French auberge — though the presence of a spring-fed onsen bath in every room is reassuring. Each of the 20 rooms is laid out in a Western style, some with views of the Hakone caldera, others overlooking the waters of Sagami Bay. And the cuisine, though crafted from painstakingly sourced local ingredients, is European as well — chef Suguru Urushibara specializes in the French and Italian culinary traditions.
