The village of Aubrac has been something of a stopoff for travelers for at least 900 years, being a site of pilgrimage along a well-established Roman road. Standing near the entrance to the village is the stately La Colonie, an update of the 1900s Hôtel Parisien. The Colonie’s rooms come from a French countryside tradition, rustic yet chic and warm.
