Neumünster’s heritage as a manufacturing city means it’s plentifully supplied with well-aged industrial architecture, which is promising raw material for today’s wave of boutique hoteliers. The old steelworks — the Altes Stahlwerk — is just such a place, a thoroughly reinvented industrial space that’s now a colorful, plush, and character-filled 100-room luxury boutique hotel. The spa puts the shop floor to a much softer use, while the restaurants, 1500°C and Gustav’s, serve ingredients from a local farm partnership, whose eggs, cheese, dairy and other products are for sale in the hotel’s farm shop.
