A vineyard-fringed hilltop in the Languedoc countryside is the setting for Château Capitoul, a fairy-tale castle containing eight ultra-chic rooms and suites, alongside a sprawling collection of some 44 modern-luxe villas, each one suitable for four to eight guests. The castle rooms, as is usual in these cases, are a bit more unusual, while the villas spread out, many featuring plunge pools.
