The name Tiara refers to the district (Itacoatiara) in which chef Rafa Gomes was born. Nowadays, he owns two restaurants called Itacoa and, to complete the full name, Tiara. This famous chef is known for his appearance on reality cooking shows and his impressive career thus far, including stints in leading restaurants in New York. Housed in the Rio Design Leblon complex, the restaurant boasts an elegant backdrop of soothing tones for innovative cuisine that relies on modern techniques and the use of seasonal ingredients where possible. Here, the chef elevates duck meat (a key ingredient in his story) to another level. An example of this is the aged duck lacquered with honey and spices served with pumpkin, miso and a “gastrique” sauce – a quite surreal combination!
