‘Macua’ is a contraction of three French words: magnifier, to make larger: cuisine; and agréable, enjoyable. Chef Daisuke Nakayama derives his creative inspiration from picturing the smiles of his guests. Hors d’oeuvres in small servings on multiple plates are a delightful surprise.
