In the city of Besançon a 19th-century cloister has been transformed into Le Sauvage: a lovely boutique hotel, and one whose monastic character lends it a unique personality. The name is a bit of a puzzle, as there’s nothing at all wild about the experience; guests today live in a comfort that the nuns could never have imagined, not only in-room but in the hotel’s spa as well. The setting has much to offer, with views of the old citadel and the river, and the town is home to some fine restaurants — one of which is located beneath Le Sauvage’s roof.
